Dolcetto d’Alba “Vigna Pepe” DOC
The Dolcetto d’Alba DOC red wine is one of the types of wine included in the Dolcetto d’Alba DOC denomination, a DOC of the Piedmont region. The specifications of the DOC denominations include specific types of wine, which are characterized by their ampelographic composition, i.e. by the vines allowed for their production, by the winemaking procedures and by the specific organoleptic characteristics of the wine. The vines that form part of the Dolcetto d’Alba DOC wine are 100% Dolcetto.
The characteristics of Marenco’s Dolcetto d’Alba DOC “Vigna Pepe”:
VARIETY: Dolcetto 100%.
CULTIVATION OF THE VINEYARD: Low Guyot system on medium-slope hills with medium-textured clayey-calcareous soil.
YIELD PER HECTARE: 56 hectoliters.
HARVEST PERIOD: 10/15 September.
VINIFICATION: Soft pressing and destemming. Controlled fermentation 28/30° C in thermo-conditioned macerators with continuous movement of the crushed grapes for greater color extraction, lasting approximately 4/5 days. Racking off after fermentation.
AGING: First transfer after 20 days, storage in AISI 316 stainless steel tanks for 5 months and subsequent transfer before bottling.
ORGANOLEPTIC CHARACTERISTICS: Intense ruby red color with purplish hues, it has clear hints of almond and cherry. Dry, harmonious and velvety taste, with a typical slightly bitter aftertaste.
GASTRONOMIC COMBINATIONS: A classic wine for the whole meal that goes well with dishes that are not too demanding.
SERVING TEMPERATURE: 14° – 16° C
AGEING: No type of aging is foreseen. This Dolcetto gives its best during its first years of life for its freshness and its clean and marked aromas.
