Langhe Nas-Cetta of Comune di Novello DOC or Nas-Cëtta
The Langhe Nascetta or Langhe Nas-Cetta del Comune di Novello DOC, the place in the heart of the Langhe where this autochthonous wine has been produced since ancient times and was rediscovered in the mid-1990s.
This almost lost semi-aromatic white vine became part of the Langhe DOC and in 2010 the recognition of the Langhe Nas-cëtta DOC of the Municipality of Novello was obtained, the production of which is authorized only in the Municipality using 100% Nas-cëtta grapes.
White wine with a strong character, symbol of a small territory like Novello and of the protection of the wine culture of the Langhe, an essential element for the protection of the territory recognized in 2015 as a Unesco World Heritage Site for wine landscapes.

VARIETY: Nas-cetta 100% certified
CULTIVATION OF THE VINEYARD: Low Guyot system on medium-slope hills with medium-textured clayey-calcareous soil.
YIELD PER HECTARE: about 52 quintals.
HARVEST PERIOD: 1/10 September.
VINIFICATION: 24 hr cryomaceration with the traditional system. Aging yeasts for structural purposes. Decantation of the solid substances in suspension for about 14 hours. Fermentation at a temperature of about 16/18° C. Racking off after fermentation.
AGING: First transfer after 40 days, storage in AISI 316 stainless steel tanks.
ORGANOLEPTIC CHARACTERISTICS: Straw yellow color with greenish reflections, delicate and fine aroma. Saline, fresh and very harmonious flavour, aromatic profile with hints of citrus fruits, acacia honey and flowers.
GASTRONOMIC COMBINATIONS: A classic wine for the whole meal that goes well with fish, raw meats and hors d’oeuvres.
SERVICE TEMPERATURE: 8°C
AGEING: No type of aging is foreseen.
